Thomas Foley, 50, has been with ACME for the past three decades. Even though the Newtown, Pennsylvania, meat department manager is easygoing, he isn't afraid of a throwdown. That is, Thomas enjoys watching Bobby Flay's popular cooking show, "Throwdown! With Bobby Flay" because of his easy-to-create dishes. We wouldn't dare throwdown with Thomas, but with the holiday season upon us, we decided instead to have a conversation with him about his favorite foods, cooking and more.
What was your first job, and what were the critical skills you learned from it?
Clerk/cashier; I learned how important the customer service side of a business is.
What's your favorite cut of beef?
Rib steak/prime rib because of the amount of flavor in this cut of meat.
What's the one cut of beef that is the most misunderstood?
London broil. People do not know the proper way to cook this cut of beef. If marinated and cooked correctly, it is a very tasty cut of beef at a reasonable price.
What's your favorite dish?
Chicken Marsala. It's inexpensive, easy to prepare and it is not your basic chicken dish.
What's your favorite way to help customers during the busy holidays?
We will cut anything special and offer great cooking suggestions. One suggestion is that there are many cuts of beef that become tough when cooked on high temperature. Slow cook at a lower temperature for taste and tenderness.
And what's your favorite dish recommendation for the holidays?
Prime rib roast, we hand tie them and offer a pop up cooking timer.
