Little fried tubes of heaven. Serve as an appetizer.

Ingredients

  • 12 small corn tortillas
  • 1 1/2 cups cooked meat (chicken works well, but any meat will do), shredded
  • 1/2 cup vegetable oil for frying
  • 1 cup lettuce, chopped
  • 1/2 cup salsa
  • 1/2 cup sour cream

Directions

  • Preheat oven to 350°F.
  • Wrap tortillas in aluminum foil and heat in oven for 15 minutes.
  • Once warm, place line of cooked meat in each tortilla. Roll tightly.
  • Meanwhile, add ¼-inch oil to heavy-bottomed skillet and warm over medium heat.
  • When oil is warm, fry tortilla rolls; turn them so they brown evenly and drain on paper towels.
  • Garnish with lettuce, salsa, and sour cream.
