Recall luxurious, yet simple dinners of the past with this side dish—roasted onions topped with an aromatic butter sauce.


  • 4 medium onions
  • 1/4 cup packed fresh herbs (such as sage, thyme, oregano, or marjoram)
  • 1/4 cup butter


  • While roasting the four onions, prepare the herb-butter sauce.
  • When onions are soft, remove from oven and cut in half; serve with herb butter sauce.
  • Trim leaves from fresh herbs such as sage, thyme, oregano, or marjoram; set aside.
  • In small skillet, melt butter, add fresh herbs.
  • Cook, stirring over medium heat until butter begins to brown and the herbs are crispy (be careful not to burn butter or herbs).
