Grilled Caprese Portabella

This week the Acme in Hockessin, DE will be promoting its Swap It or Top It contest in the Mushroom section of the produce aisle. The event will be supporting ACME’s June 10/$10 Portabella Cap program, and will give customers a chance to submit their favorite Mushroom recipe for a chance to win a $5,000 grand prize being offered by the Mushroom Council.  On Friday, June 20th, the Hockessin store will be displaying and giving out samples of a Grilled Caprese Portabella Recipe to their customers to entice people to participate in the contest. This recipe is great for the grilling season and is a healthy gluten-free option that anyone can enjoy.

Grilled Caprese Portabella

2 Portabella caps
4 slices of fresh mozzarella
1/2 cup of cherry tomatoes, sliced
3 tablespoons olive oil
2 cloves chopped fresh garlic
1/4 cup fresh basil, chopped


1- Preheat the grill to 425 degrees
2- Drizzle portabellas with olive oil, chipped garlic, and sprinkle generously with salt and pepper.
3- Grill on a hot grill, or place on a baking sheet lined with parchment paper inside the preheated oven and cook for 15 minutes.
4- Top with mozzarella and tomatoes. Return to oven for 8-10 minutes more or pop back on the grill until the mozzarella is melted.
5- Remove from the oven or grill and top with fresh basil. Serve and enjoy.
