Fresh Striped Bass Fillets

Our current supply of Fresh Striped Bass Fillet is Product of the Carolinas here in the USA & is Farm Raised.
Striped Bass Fillets can only be sold in the State of New Jersey as Farm Raised. There’s a law prohibiting the sale of Wild Caught Striped Bass in NJ!
The Carolina Striped Bass is a delicate, mild fish with white flaky flesh that is low in calories and high in protein.
Our Carolina Striped Bass are harvested, then completely purged and polished in filtered, highly oxygenated, chilled salt water. This procedure insures a very high quality product with superb taste and texture.

Striped Bass with Montreal Salsa

Ingredients (Prep Time – 10 Minutes, Cook Time – 10  Minutes) – Makes 4 Servings

2 Tbs oil
1 tsp McCormick® Grill Mates® Montreal Steak Seasoning
1/2 tsp McCormick® Thyme Leaves
1 medium tomato, finely chopped, (about 1 cup)
1 lb striped bass, tilapia, or other firm white fish fillets


Mix tomato, oil, Steak Seasoning and thyme in small bowl. Spread mixture over fish fillets.
Grill over medium heat 10 minutes or until fish flakes easily with a fork. Do not turn fish




Mediterranean Fish Fillets

Ingredients (Prep Time 10 Minutes, Cook Time 20 Minutes) – MAKES 6 SERVINGS

1 1/2 lbs firm white fish fillets, such halibut or striped bass
1 Tbs olive oil
1/2 cup finely chopped onion
1 can (14 1/2 ounces) diced tomatoes, drained
1/2 cup pitted Kalamata, green or black olives, cut in half lengthwise
2 Tbs white wine
1 tsp McCormick® Basil Leaves
1/2 tsp McCormick® Garlic Powder
1/4 tsp McCormick® Thyme Leaves


Preheat oven to 375°F. Coat baking dish with no stick cooking spray. Place fish in single layer in baking dish. Lightly salt and pepper the fish.
Bake 12 minutes. If fish is over 1-inch thick, increase cooking time to 15 minutes. Meanwhile, heat oil in medium saucepan on medium heat.
Add onion; cook and stir 5 minutes or until softened. Add tomatoes, olives, wine, basil, garlic and thyme. Simmer, uncovered, 3 minutes. Remove fish from oven.
Spoon sauce over fish. Return to oven; bake 5 minutes longer or until fish flakes easily with a fork. Serve immediately.




Grilled Fish Tacos

Ingredients (Prep Time 20 Minutes, Cook Time 12-20 Minutes) – MAKES 4 SERVINGS 

1/2 cup fat-free sour cream
1/4 cup chopped fresh cilantro
1 Tbs fresh lime juice
1 Tbs blackening or Cajun seasoning
3/4 lb firm white fish fillets (such as red snapper, halibut or striped bass)
4 fat-free flour tortillas
2 oz Cabot 50% Reduced Fat Cheddar, grated (about 1/2 cup)
Optional toppings: fresh lime wedges, diced tomato, finely shredded red cabbage, sliced green onion, chopped fresh jalapeno salsa


Prepare and preheat grill. Combine sour cream, cilantro and lime juice in a small bowl; set aside. Sprinkle seasoning over fish.
Cook fish on grill over medium-high heat just until opaque in center (about 2 to 5 minutes per side depending on thickness of fillets.)
Transfer fish to bowl and flake into bite-size pieces with fork. Place tortillas on grill and cook until lightly charred on both sides, about 20 seconds per side.
Divide fish among tortillas; top evenly with sour cream mixture and cheese. Serve with toppings, as desired.
Note: To prepare fish in the oven, place on a baking sheet coated with cooking spray and bake at 350 degrees for 12 minutes or until fish flakes with a fork.

    I did not realize the fish had not been deboned next time I will ask if the bones have been removed. If the fish was filleted I would have served it.
