Fresh Alaska Halibut Fillet

Our current supply of Fresh Halibut Fillet is Product of USA and is Wild Caught. It’s flown in fresh from Alaska. Halibut has a very mild taste and a firm texture. It is sweet tasting, lean and has fine grained, dense meat that will dry out if it is overcooked. Halibut are extremely versatile for cooking methods and sauces. It’s ideal for skewering to make Kabobs. Halibut can be easily overcooked so make sure to cook it to an internal temperature of about 125 degrees – 130 degrees Fahrenheit. This leaves the fish tender and moist. Favorite methods of cooking Halibut are grilling or sautéing …and of course battered and fried Halibut & Chips!

Pesto Topped Halibut

Ingredients (Prep Time – 10 Minutes, Cook Time – 15  Minutes) – Makes 4 Servings

1/3 cup Hellmann’s® Mayonnaise
1 cup loosely packed fresh basil leaves
1 clove garlic
1/4 cup pine nuts or walnuts
1/4 cup grated Parmesan cheese
4 halibut or cod fillets (about 1 lb.)


Preheat oven to 425°. Lightly grease baking sheet; set aside.
Process all ingredients except halibut in food processor or blender until well blended. Evenly spread on halibut.
Bake 15 minutes or until halibut flakes with a fork.



Citrus Herb Marinated  Halibut

Ingredients (Prep Time 20 Minutes, Cook Time 12 Minutes) – MAKES 8 SERVINGS

1 package McCormick® Grill Mates® Garlic Herb & Wine Marinade
1/4 cup orange juice
1/4 cup vegetable oil
1 Tbs lemon juice
2 lbs halibut fillets


Mix Marinade Mix, orange juice, oil and lemon juice in small bowl.
Place halibut in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
Refrigerate 15 minutes or longer for extra flavor. Remove halibut from marinade. Discard any remaining marinade.
Grill over medium-high heat 4 to 6 minutes per side or until fish flakes easily with a fork.


Herb Crusted Halibut

Ingredients (Prep Time 20 Minutes, Cook Time 10 Minutes) – MAKES 4 SERVINGS 

4 (6 ounce) halibut fillets
3/4 cup panko bread crumbs
1/3 cup chopped fresh parsley
1/4 cup chopped fresh dill
1/4 cup chopped fresh chives
1 tablespoon extra-virgin olive oil
1 teaspoon finely grated lemon zest
1 teaspoon sea salt
1/4 teaspoon ground black pepper


Preheat the oven to 400 degrees F (200 degrees C).
Line a baking sheet with foil. Combine panko bread crumbs, parsley, dill, chives, extra-virgin olive oil, lemon zest, sea salt, and black pepper in a bowl.
Taste and adjust with more salt if desired. Rinse halibut fillets and pat dry with a paper towel.
Place halibut fillets onto the prepared baking sheet.
Generously spoon the herbed crumbs over the fish, and lightly press crumb mixture onto each fillet.
Bake in the preheated oven until crumb topping is lightly browned and fish flakes easily with a fork, 10 to 15 minutes.

Party Idea: For an appetizer tray, serve on a large platter along with cut-up fresh vegetables, such as carrots, celery and jicama. Don’t forget the sauce for dipping!
