Spaghetti Squash Soup

With chillier weather setting in, there is no greater comfort than a warm bowl of soup! Below, find four simple and seasonal soup recipes that will serve as a great side dish or main course for any fall occasion. From an upgraded classic to unique new favorites, these four recipes will have you falling in love in no time!

Roasted Tomato Soup

Let’s start with the basics. This new and improved take on traditional tomato soup is bursting with classic fall ingredients. Paprika, basil and garlic create a robust flavor palette that any soup-lover can appreciate. For a fresher take, try using fresh basil in place of dried; and for a creamier texture, try adding 2-3 tablespoons of nutritional yeast directly into the soup. With such a beautiful, bright red color, this soup will look gorgeous garnished with light green basil leaves and will look fabulous on any fall table.

Pumpkin & Apple Soup

Does it get any more ‘fall’ than pumpkins AND apples together in one harmonious seasonal dish? This Pumpkin & Apple Soup recipe is made with granny smith apples, O Organics® 100% Pure Pumpkin and jalapeños for an added kick. This recipe is FULL of the fall flavors we all know and love. Added bonus: this soup pairs perfectly with a toasted cheese sandwich. May we suggest whole grain bread spread with Dijon mustard, topped with granny smith apple and jalapeño slices? Cover both sides with sharp cheddar cheese (now we got your attention!) and broil open-faced. Thank us later!

Ginger & Coconut Roasted Spaghetti Squash Soup

Made with spaghetti squash (obviously), baby carrots, sweet onion, garlic and ginger, this unique and vibrant dish is loaded with fall favorites. For pretty presentation and an added dash of sweet crunch, garnish each bowl of this yummy soup with toasted unsweetened coconut flakes and pepitas!

Spicy Sweet Potato Soup

Last but certainly not least, this Spicy Sweet Potato Soup is a spicier take on classic veggie stew. Sweet potatoes, onion, tomatoes, corn, spinach, chipotle pepper and black beans make this dish as filling as it is flavorful. Feeling a little spicy? Throw in a few extra peppers to heat things up! For a creamier texture, top with diced avocado. Better yet, add it all!
