Cherry Coke BBQ Boneless Chicken WingsChicken Wings

Ingredients:

  • Lancaster Brand Boneless or Bone-In Chicken Wings – 2 lbs.
  • Cherry Coke – 12 oz.
  • Unsalted Butter – 1 tsp.
  • Yellow Onion, finely chopped – 1 cup
  • Garlic, minced – 3 cloves
  • Ketchup – 3 cups
  • Light Brown Sugar, packed – 1/2 cup
  • Cherry Preserves – 1/2 cup
  • Red Wine Vinegar – 1/2 cup
  • Chili Powder, prepared – 2 tsps.
  • Cayenne Pepper, groud – 1/4 tsp.

Directions:

  • Preheat the oven to 400 degrees.
  • Place wings in a single layer on a non stick cookie sheet.
  • Bake for 50 minutes turning wings over once half way through cooking time or until internal temperature reaches 165 degrees.

Prepare the Cherry Coke BBQ Sauce

  • In a large saucepan over medium heat, melt the butter.
  • Add the onion and garlic and cook until slightly softened,  5-6 minutes, stirring occasionally.
  • Whisk in the remaining ingredients, increase the heat to medium-high, and bring to a boil.
  • Then reduce the heat to medium-low and simmer, uncovered, until the mixture thickens and is reduced to 4 cups, 45-55 minutes, stirring occasionally.
  • When both wings and sauce are done, toss wings through the sauce in a large bowl.

Buffalo Bison Meatballs

 Ingredients

  • Ground Bison (ground beef if you prefer) – 2.5 lbs.
  • Eggs – 3
  • White Bread (crust removed) – 3 slices
  • Milk – 1/2 cup
  • Shredded Mozzarella – 4 oz.
  • Basil, finely chopped, fresh – 1 tbsp.
  • Oregano, finely chopped, fresh – 1 tbsp.
  • Thyme, finely chopped, fresh – 1 tbsp.
  • Pecorino Cheese, grated – 2 oz.
  • Salt – 1 tsp.
  • Pepper – 1 tsp.
  • Olive Oil – 2 tsp.
  • Extra Olive Oil for rolling meatballs

 Directions

  • Preheat oven to 400 degrees.
  • Crack eggs. Chop herbs.
  • Combine eggs, milk and bread.
  • In a mixer fitted with a paddle attachment add everything but egg mixture. Mix on low until all ingredients are incorporated. (if you don’t have a mixer, use a large bowl and fold in the ingredients by hand).
  • With mixer on low, slowly add egg, milk and bread.
  • Rub hands with olive oil and form into meatballs.
  • Cook for 15-18 minutes or until internal temperature reaches 165 degrees.
  • In a large bowl toss Bison meatballs through Sweet Baby Ray’s Buffalo Wing Sauce.
  • Serve over pasta, in a roll or on their own with an Ice Cold Coca-Cola.
