Berks Pita Pizza Bites



  • 4 pita breaks, 6-1/2 inches each
  • ¾ cup marinara sauce
  • 1-1/4 cup shredded mozzarella
  • 2 Berks Organic Beef Franks, parboiled and thinly slices
  • 2 large button mushrooms, thinly slices
  • 4 large pitted black olives, thinly slices
  • ¼ teaspoon dried oregano

  • Preheat the oven to 425 degrees.
  • Place the pitas on a baking sheet.
  • Using a spoon, divide the marinara sauce over the pita breads making sure to leave a 1/4″ border on each pita pizza.
  • Sprinkle 1 cup of cheese over the pizzas. Evenly distribute the frank slices, mushroom slices and olive slices over the pizzas. Sprinkle the pizzas with the remaining 1/4 cup of cheese.
  • Put the baking sheet in the oven. Bake for 10 minutes until the cheese has melted and the pita bread is crisp.
  • Remove the pizzas. Sprinkle with dried oregano. Allow the pizzas to cool for 2 minutes. Slice each pita into 4 triangles. Serve warm.

Serves 4-6




Berks Hot Dog Enchiladas


  • 2 cans 15oz. each chili with beans
  • ¾ cup water
  • ¼ cup low fat sour cream
  • 1 tablespoon hot sauce
  • 8 small flour tortillas
  • 8 Berks Organic Beef Franks
  • ¾ cup shredded Mexican style cheese
  • ¼ cup sliced black olives
  • 2 tablespoons chopped scallions

  • Preheat the oven to 350 degrees. Spray a 9 x 13 inch baking dish with non-stick cooking spray.
  • In a medium bowl, combine chili, water, sour cream and hot sauce.
  • Spread 1/4 cup of the chili mixture over the bottom of the baking dish.
  • Roll each hot dog in a tortilla and place them in the baking dish in two rows of four.
  • Pour the remaining chili mixture over the hot dog enchiladas, making sure to spread the mixture all around. Sprinkle the enchiladas with cheese and then with the olive slices.
  • Cover the dish with foil and bake for 30 minutes until the mixture is bubbling.
  • Remove the foil and bake for an additional 5-8 minutes until the cheese is melted and browned.
  • Remove the dish and allow to cool for 5 minutes. Sprinkle with chopped scallions and serve warm.
