Main Ingredients

  • 1 tablespoon of olive oil
  • 1 pound chicken thighs (deboned, skinless (may be substituted with chicken breasts))
  • 1 onion (diced)
  • 1 cup frozen mixed vegetables (carrots, peas, corn, green beans)
  • 1 cup of Uncle Ben's Flavor Infusions Chicken & Herb Rice (may be substituted with Uncle Ben's Rice Parboiled Long Grain Enriched Original)
  • 2 cups of water

Cooking Instructions

Step 1

In a skillet, over medium-high heat, add oil and chicken.

Step 2

When chicken is browned, stir in onions. Cook for about 2 more minutes.

Step 3

Add mixed vegetables, Uncle Ben's Flavor Infusions Chicken & Herb Rice, and water.

Step 4

Bring to boil, then reduce to medium heat and simmer covered for 15 minutes or until water is absorbed. Enjoy!
