Chicken And Herb Spring Medley
Enjoy a super simple classic dinner with this Chicken and Herb Spring Medley recipe. Just veggies, chicken and rice make a wholesome and satisfying family meal. And it only takes about 20 minutes to prepare!
Total cook time
- 1 tablespoon of olive oil
- 1 pound chicken thighs (deboned, skinless (may be substituted with chicken breasts))
- 1 onion (diced)
- 1 cup frozen mixed vegetables (carrots, peas, corn, green beans)
- 1 cup of Uncle Ben's Flavor Infusions Chicken & Herb Rice (may be substituted with Uncle Ben's Rice Parboiled Long Grain Enriched Original)
- 2 cups of water
In a skillet, over medium-high heat, add oil and chicken.
When chicken is browned, stir in onions. Cook for about 2 more minutes.
Add mixed vegetables, Uncle Ben's Flavor Infusions Chicken & Herb Rice, and water.
Bring to boil, then reduce to medium heat and simmer covered for 15 minutes or until water is absorbed. Enjoy!
