Fresh Mozzarella Pizza Frittata

Main Ingredients

  • 8 eggs
  • 1/4 cup whole milk
  • 1/4 cup grated parmesan cheese
  • 1/4 teaspoon kosher salt
  • 1/3 cup pizza sauce
  • 3 ounces sliced fresh mozzarella
  • 10 torn basil leaves

Cooking Instructions

Step 1

Preheat oven to broil. In a medium bowl, whisk together eggs, milk, parmesan cheese, salt and pepper.

Step 2

Preheat a 10-inch oven safe sauté pan over medium heat on the stove top. Add olive oil and let heat for about 30 seconds. Add egg mixture and stir with a flexible spatula until soft curdles begin to form, about 2 to 3 minutes. Place under broiler until set, about 30 second to 1 minute.

Step 3

Remove from oven and top with pizza sauce, spreading to 1/2 inch from the rim of the pan. Top with mozzarella cheese. Return to broil for 1 to 1 1/2 minutes until cheese is bubbly. Cut into wedges and top with torn basil leaves. Serve.

Don't skip the dairy! A beautiful frittata texture is best when milk and/or cheese is added. For a more decadent texture try substituting half and half or whipping cream, or another hard cheese such as Pecorino Romano.
