4 minute baby kale! Heat 2 tsp. oil in a large skillet over high heat. When hot, add baby kale and cover with lid. Stir baby kale after 1 minute and replace lid. Cook 3 minutes more, or until wilted, stirring occasionally. Season with salt and pepper to taste. Garlic lovers, add 1 clove crushed garlic or 1/2 tsp. garlic powder to skillet when you add baby kale. Bacon lovers, add 2 strips of cooked, crumbled bacon! Perishable, keep refrigerated.
