About the Beans & Whole Grains: They are an excellent source of protein, certain B vitamins, carbohydrates, many minerals and fiber. Today with the trend towards preparing highly processed quick-serve foods, many of us get emotional satisfaction from preparing and serving a nourishing and from scratch meal to our families. Beans and grains are not only pleasing to the palate, but when visible in our package their rich earthen colors are a feast for the eye. About the Name Buckeye Beans: Located on the quiet waters of the Little Spokane River, just a stones throw from Spokane, the mill town of Buckeye was once a bustling community of three hundred residents. Lumber was cut from the surrounding pine and tamarack forests and milled at the Buckeye Lumber Company. Boxes made from first grade lumber were shipped from the Buckeye Box Factory to various parts of the United States via the Spokane Falls & Northern Railroads. Many local commercial apple growers shipped their fruit in Buckeye boxes. By 1912 the mill was closed and most of the townsfolk moved on. Our company was founded just downstream from this sleepy little town and was inspired to create genuine products that reflect the simpler way of life. Hearty soups on the back burner and beans baking in the oven provide a flavor of days gone by.

1 box Buckeye Bean Soup; 1 seasoning packet (included); 4 cups water; 1 lb ham pieces; 1 large onion, chopped; 2 cans (14-1/2 oz) tomatoes, no salt added, chopped (For less tomato taste, use 1 can (14-1/2 oz) tomatoes). The night before the soup is to be served, rinse and sort out any foreign material from beans. Place beans and 4 cups water in a kettle and let soak overnight. Isn't this easy?! Drain off the water from the beans. Add 4 cups fresh water, bring to a boil for 45 minutes, then add remaining ingredients to beans. Cover and simmer for five hours or so. Stir occasionally.
