Directions Boil: Preparation: Combine 1-1/2 cups water, 1 cup rice and a pinch of salt. Bring to a boil over high heat. Cover, reduce heat and simmer for 20 minutes. Remove from heat. Let stand covered for a few minutes. Fluff and serve. A rice cooker may be used with the same water-to-rice ratio. 1 cup raw rice yields 3 cups cooked rice. Indian-Style Basmati Rice: Lightly brown 1 cup sliced onion in medium saucepan with 1 tbs oil, 1 cinnamon stick, 1 tsp cumin seeds, 2 whole cloves, 1/2 tsp salt. Add 1 cup rice; stir 1 minute. Slowly add 1-1/2 cups water. Simmer covered 15 minutes or until done. Remove whole spices. Serve with curry or dal.
